update: We were inspected today again by ecologia so things must still be moving and alive (we passed - again). This is starting to feel like being in bureaucratic purgatory. Don't get me wrong. Everyone (except one person) has been great to deal with and most of the delays have been our fault (expediter getting deported, not knowing the right people, not knowing the right way to present things...).

We have finally defined our cuisine for those who have asked.

It is Mexican / Neanderthal Fusion, the type of food a Northern European Neanderthal would relish here in this part of the tropics.

Freshly killed or gathered & spicy...

We are sure to be a failure with our BBQ ribs. They are too good to eat with the sugary sauces people are used to: Neanderthals would love them. Real smoke. Real fire. Real meat.

So sorry to all the people who showed up after the ostiones were gone. Too many people and too little expectation. Who would have thought that so many oysters would be eaten so quickly. Quite an amazing turnout. I never knew that anyone besides me loved oysters here in Vallarta. lol
