Mordidas was conceived and is operated by 2 former organic farmers from California. Many of the spices used in our food are grown by us. The differences between our spices and the commercially available ones may be indistinguishable to some but they are important to us.
For example, in our Italian dishes we use fresh Sicilian Oregano (Origanum x) in place of Mexican Oregano (Lippia graveolens), which is not even botanically an oregano. We use fresh Sweet Mediterranean Bay leaves (Laurus nobilis) instead of the readily available California Bay leaves (Umbellularia californica). We use a selected, fresh variety of Rosemary over the commercial dried because we like the flavor better. We grow our own hoja santa, basil, lemon grass, kaffir lime, curry leaf and Mexican tarragon, also.
When you first enter Mordidas, you will see many plants. Some of these you will recognize and some you may not. Sometimes we have live plants for sale.
Our location is a vivero as well as a restaurant. Mordidas has a large, private, roof-top garden/nursery.
We have select, choice strains of many popular spices and herbs.
Fresh herbs are essential to fine cuisine.
